There's LOTs of wrestling companies out there that focus on in-ring action and not goofy storylines. You just need to know where to look.
Japan's a good start. 90s All Japan had some of the most intense worked fights of all time. A lot of the main guys there were very believeable, because they had a more realistic, down to earth style, and the crowd ATE IT UP.
I have a DVD with a tag team match between Steve Williams and Terry Gordy vs the late great Mitsuharu Misawa and Toshiaki Kawada. Williams and Gordy looked like they were really hurting Misawa's leg, in fact they actually ripped the leg of tights in the match from the legwork.
Not to mention that gimmick matches are almost unheard of in the mainstream of Japan, with the indy promotion DDT being the only one that does them on a semi-regular basis, and they do it pretty much for comedic effect... example being the "Silence Match", while wrestlers were penalized for making noise.
